Clementine Marmalade
Notes
We live close to clementine country here in Northern California. They're inexpensive and plentiful for a short time.
Ingredients
2 cups thin stripped clementine, 1" long
3 cups cold water
8-10 clementines, pulped and juiced
1/3 cup lemon juice
2 cups boiling water
3 cups sugar
Preparation
Heat clementine peel and cold water to a covered moderate simmer. Continue to simmer until tender -- around 30 minutes.
