We live close to clementine country here in Northern California. They're inexpensive and plentiful for a short time.
Ingredients

thin stripped clementine,
1" long

3 cups

cold water
|

clementines,
pulped and juiced
|

1/3 cup
|
lemon juice
|
|
2 cups
|
boiling water
|
|
3 cups
|
sugar
|
Preparation
Heat clementine peel and cold water to a covered moderate simmer. Continue to simmer until tender -- around 30 minutes.
