Egg Flower Soup
Notes
Egg Flour Soup, also known as "Egg Drop Soup" is one of my favorite Chinese Food treats.
Well worth making.
Ingredients
4 cups stock
3 Tbl light soy sauce
2 Tbl dry sherry
3 scallions, sliced obliquely
small piece fresh ginger, shredded
4 lettuce or cabbage leaves, shredded
1 tsp seasame oil
2 eggs, beaten
Preparation
Mix together stock, soy sauce, dry sherry , 3 scallions, ginger, lettuce leaves and sesame oil and bring to a boil and remain for two minutes.

Gently pour the eggs into the broth in a thin, steady stream into the center of the pot. Let sit for three seconds and quickly stir the soup. Season to taste and allow eggs to cook. Serve immediately.
