Ingredients
1 15 oz can chickpeas (garbanzos), drained
1 garlic clove, crushed
2 Tbl chopped fresh parsley
2 Tbl chopped fresh cilantro
1 Tbl chopped fresh mint
1 tsp cumin seeds
2 Tbl fresh bread crumbs
1 tsp salt
freshly ground pepper
oil, for deep frying
pitas, lettuce, tomatoes, tahaini or yogurt, for serving
Preparation
Grind the chickpeas in a food processor until smooth then add all the other ingredients except the oil. Heat 1/4 inch of oil in a frying pan and fry a few at a time. Cook each for 8 minutes, turning just once. Drain on paper towels. Serve in pitas with lettuce, tomatoes and tahaini or yogurt.
