Sounds like an interesting way to go: I like mops but always felt like the rub was losing out in the wash.
Ingredients

1-2 slabs

pork spare ribs

Spice Rub

4 Tbl

paprika

light brown sugar
|

2 Tbl

chili powder
|
|
2 Tbl
|
ground black pepper
|
|
1 Tbl
|
table salt
|
|
2 tsp
|
garlic powder
|
|
2 tsp
|
onion powder
|
|
1 tsp
|
cayenne pepper
|

|
Cider Mop
|
|
3 cup
|
apple cider
|
|
1 cup
|
cider vinegar
|
|
|
hot sauce,
to taste

Preparation
Trim flaps and membrane from ribs. Mix together rub ingredients and reserve 2 Tbl for table preparation. Coat ribs with rub at least an hour before cooking. Combine cider and vinegar and warm to simmering.
Cook ribs over indirect, smoky low heat for 3-4 hours, mopping every 30 minutes after the first hour.
Sprinkle 1 Tbl of rub over ribs while on the grill before removing and heat each side for an additional 30 seconds.
While meat cools, add remaining 1 Tbl of spice rub to the mop and reduce to 2 cups. Season with hot sauce and serve.
