An interesting sounding recipe.
Ingredients

3 cups

Unbleached Bread Flour
|
|
1 cup
|
rolled oats
|
|
2 Tbl
|
butter
|
|
1 1/2 tsp
|
salt
|
|
3 Tbl
|
brown sugar or honey
|
|
2 tsp
|
instant yeast (alt: 1 pkt dry yeast)
|
|
1 1/3 cups
|
milk,
lukewarm
|
|
3/4 cups
|
raisins or currants
|
Preparation
Mix together all ingredients to create a shaggy dough. Knead by hand 10 minutes or 45 minutes by machine until smooth.
Put dough in a lightly greased bowl and allow to rest 1 hour, until not quight double.
Proofing: Shape as cylinder and place in 9x5" pan and cover with greased plastic rap and allow to rise 45-60 minutes until crested 1-2 inches over the rim of the pam.
Bake at 350F for 35-45 minutes. They say the center will reach 190F, but we'll never know.
