I can't say this is all that authentic, but it is rather tasty. The end product ends up a bit salty -- using low-sodium soy sauce may rectify this some.
Ingredients

boneless pork or pork ribs,
cut into 1 1/2-2" chunks

1/4 cup

water
|
|
1/4 cup
|
soy sauce
|
|
4 Tbl
|
vinegar
|
|
6 cloves
|
garlic,
minced
|
|
10
|
peppercorns
|
|

|
bay leaf
|
|
1/4 cup
|
white wine
|
|
2 Tbl
|
lemon juice
|
|
1 Tbl
|
sugar
|
Preparation
Marinate pork (substitute chicken) in all ingredients for 1-2 hours. Simmer in saucepan for 30 minutes, stirring occasionally. Simmer on low until sauce becomes thick and meat becomes tender. Add salt and pepper as needed.
