Thyme Buttermilk Chicken

Ingredients
1 whole chicken, sectioned into 8 pieces
2 cups all-purpose , flour
1 cup buttermilk
2 Tbl whole dried thyme
creole seasoning (e.g. "Tony's" brand)
oil, for frying
 
Garlic Mashed Potatoes
1 potato
2 Tbl milk
1 tsp garlic powder
1 Tbl chopped parsley
salt
freshly ground black pepper
Preparation
** For Chicken:

Marinate chicken in buttermilk for about 1 hour in frefrigerator. Combine the flour, dried thyme and Creole seasoning in a bowl for dredging. Drain the chicken and dredge in flour mixture, shaking off any excess.

Fry chicken in 350F oil for 9-10 minutes or until golden brown. Complete the cooking by placing chicken in a 350F oven until chicken is cooked through, about ten minutes -- the juices will run clear.

Serve with Garlic Mashed Potatoes, yo!
