Zucchini Bread, Candidate One
Yield:
1 loaf
Notes
The problem with -collecting- recipes is that at times you can't tell which of the two on a given Photostat was -the- one. Fortunately the California summer provides enough zucchini for me to try each of these out by the next cookbook...
Ingredients
1 cup butter
1 cup granulated sugar
1 cup raw zucchini, grated, raw
2 eggs
1 3/4 cup flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp nutmeg
1 tsp vanilla
1/2 cup chopped walnuts
Preparation
Cream butter with sugar and beat in eggs. Separately blend flour, salt, baking soda and nutmeg. Fold in half the dry ingredients into butter mixture and add zucchini, folding in remaining dry ingredients. Mix in walnuts and pour into a 9x5x3-inch loaf pan and bake at 350F for 50-60 minutes.
