Almond Tabbouleh
Ingredients
1 cup bulgar (cracked wheat)
2/3 cup sliced green onions
1/2 cup chopped parsley
2 tsp chopped mint
2/3 cup chopped almonds, toasted
2/3 cup cherry tomatoes, quartered or 1/2 cup raisins
1/3 cup lime or lemon juice
1/4 cup oil
salt & pepper to taste
Preparation
Pout boiling water over bulgar and set aside about 30 minutes until complete absorbed. Add remaining ingredients, toss, cover & chill for at least 2 hours. Serve on romaine leaves. (Very Good)
