William Pollock's Eat Happy: Artichoke "Quiche"

Ingredients

2 jars	marinated artichokes, chopped fine
1	small onion, diced
2 cups	sharp cheddar cheese
4	eggs
1/2 tsp	salt
1/4 tsp	pepper
1/4 tsp	oregano
1/4 tsp	tabasco
1/4 cup	breadcrumbs
2 tbl	parsley
2 cloves	garlic

Preparation

Saute onion in liquid saved from one jar of artichokes. Beat eggs, add seasonings, mix with other ingredients. Bake 30 minutes in 375 degree oven in greased 7x11 pan.

Cut in squared -- serve hot or cold.
