Cherry Tomatoes, halved and stuffed
Ingredients
unknown quantity cherry tomatoes
 
Cheese & Shrimp Stuffing
8oz pkg cream cheese, softened
1/4 cup catsup
1 tsp dill weed
salad shrimp
 
Guacaomle stuffing
1 ripe avacado
4 tsp lemon juice
1 clove minced garlic
1 Tbl finely minced onion
1/2 tsp salt
crumbled crisp bacon, for topping
Preparation
For all: Cut tomatoes lengthwise and discard seeds. Stuff about 4 hours before serving. Cover & refrigerate.

Cheese & Shrimp: mix cheese, catsup and dill, stuff tomatoes and top with shrimp.

Guacamole: mix ingredients together, stuff and top with crisp bacon.

Alternate method: Fill tomatoes with sauce of chopped onion, cream cheese, sour cream and black pepper. Top with a bit of parsley.
