Confetti Potato Salad
Yield:
8-10 generous servings
Ingredients
6 cups potatoes, cooked, chopped up
3/4 cup celery slices
3/4 cup thincarrotslices
1/2 cup chopped green pepper
1/4 cup chopped red onion
1-2 hard boiled eggs, sliced
1 tsp salt
dash pepper
2/3 cup mayonnaise
Preparation
Combine ingredients and mix lightly. Chill before serving.
